Spicy Honey Lime Enchiladas
This will quickly become a staple, and its really easy to make!
Ingredients:
1 ½ pounds chicken breast
1 tablespoon chili powder
1 teaspoon garlic salt
1/4 cup honey
1/3 cup fresh lime juice
8-10 large flour tortillas
8 ounces mozzarella cheese shredded +8 ounces cheddar cheese, shredded
16 ounces green enchilada sauce
Instructions:
Boil the chicken until cooked, remove from excess water and shred in a bowl
In a separate bowl, combine chili powder, garlic salt, honey and lime juice. Then pour it over the chicken. Allow to marinade for at least 30 minutes
While the chicken is marinating, preheat the oven to 350 degrees and spray a 9×13 pan with pan spray. Spread ½ cup of enchilada sauce evenly over the bottom of the pan.
In a small bowl, combine both kinds of shredded cheese.
Fill the tortillas with chicken and both kinds of cheese, saving about 1 ½ cup of cheese to sprinkle on top.
Pour the sauce on top of the enchiladas and sprinkle with the reserved cheese. Bake for 20 minutes covered with foil, then remove foil and bake for another 10 minutes or until the cheese is browning and bubbling. Serve hot and top with your favorite enchilada toppings.
